2 lbs Raw Shrimp (de-vained & de-tailed)
Flour
Cooking Oil
Cajun Seasoning
Chili Powder
1 Cup Mayonnaise
Louisiana Hot Sauce
Salt & Pepper
1 whole lime (squeezed)
1 Roasted Red Pepper (In its own juices)
1/2 cup of Sun Dried Tomatos
4-6 Buns
Sliced Lettuce
Defrost your shrimp in the sink in a strainer. (Found getting them wet helps when u toss them in the flour). Take a baking dish and mix flour, cajun seasoning and the chili powder (Add the Cajun and chili powder to your liking). (This will be the "breading" for the shrimp")(You can also use regular breading)
Heat a pan on medium heat with your cooking oil. Put enough to submerge your shrimp.
Then gently place your shrimp into the oil.
Take a plate and stack paper towels to put the shrimp on to remove the excess oil.
Once you have finished frying your shrimp place them in a large bowl.
Take your Roasted red pepper and cut into cubes.
You will now add the mayonnaise, Cajun seasoning (to your liking), hot sauce, lime juice, cubed roasted red peppers, sun dried tomatoes, and salt and pepper to taste. Mix together.
You can either toast the buns or keep cold. Slice the bun down to the end but don't completely cut through the bun. Spoon in a good helping of your shrimp mixture into the bun. Add the lettuce and a splash of Louisiana hot sauce ( tastes good with or without it)
